Pav Bhaji

Pav Bhaji has always been an attractive, tempting street food. I always cherished this dish since my childhood. I always liked it with extra butter, cheese. But I have realized not all eateries can make a delicious Mumbai special pav bhaji.

 

 

Recipe :

Ingredients :

  • 350 gms potatoes, peeled, roughly chopped
  • 350 gms tomatoes, de-skinned, roughly chopped
  • 1 cup – green peas, cauliflower florets, carrot pieces
  • 6 tbsp butter
  • 1/4 tsp cumin seeds
  • 200 gms onion, finely chopped
  • 1 heaped tsp ginger-garlic paste
  • 1/2 medium green pepper, finely chopped
  • 1 tbsp red chilli powder
  • 1-2 tbsp pav bhaji powder
  • salt as per taste
  • red food color (optional)
  • grated cheese (optional)
  • 2 tbsp coriander leaves, finely chopped
  • finely chopped onion, lemon wedges – for garnish
  • 4-6 bread buns or pav or even slice bread

Method :

  1. In a pressure cooker, boil potatoes, tomatoes, green peas, cauliflower florets and carrot for 3-4 whistles.
  2. Once the pressure is released, remove the boiled vegetables and mash using a potato masher.
  3. In a flat bottom pan, melt 4 tbsp butter.
  4. Before it browns, add the onion, cumin seeds and ginger garlic paste. Saute till the rawness of the paste is lost and onions turn transparent.
  5. Then add the green pepper and sauté.
  6. Add the red chilli and pav bhaji powder. Mix well.
  7. Add the vegetable mash, mix and add salt as per taste. You can also add red food color to impart the street food pav bhaji color.
  8. Add a little water to adjust consistency and mash further if required.
  9. Bring to a boil and garnish with coriander leaves. You can also add a tbsp of butter and grated cheese (optional).
  10. Cut the pav into half, apply butter to all the sides and warm them on a hot griddle  till the butter melts.
  11. Serve the hot pav bhaji, prepared pav with chopped onion and lemon wedges.

Cheese Stuffed Garlic Bread

Cheese stuffed garlic bread has been our favorite even back in India. Now that I have my new kitchen gadget the stand mixer, bread recipes or baking is always on my mind.

Taking garlic bread recipe shared by hebber’s kitchen as the base and alternating or adjusting few ingredients readily available at home instead of the one’s mentioned, this happens to my tried, tested and relished version. Yum yum


Recipe :

Ingredients :

Dough :

  • 1/3 cup warm milk
  • 1 tsp yeast
  • 1 tsp sugar
  • 1/4 tsp salt
  • 1 cup all-purpose flour
  • 1 tbsp butter
  • 1 tsp garlic powder
  • 3/4 tsp mixed herbs
  • oil for coating

Garlic butter :

  • 2 tbsp butter, melted
  • 1 tsp garlic powder
  • 1 tbsp coriander leaves, chopped
  • 1 tsp mixed herbs
  • 1 tsp red chili flakes

Other ingredients :

  • 1/3 cup mozzarella cheese,shredded
  • flour for dusting and rolling

Method :

  1. Mix the yeast salt and sugar in warm milk and allow it to stand for 5 mins or till frothy.
  2. In the flour, add garlic powder, mixed herbs, butter and the frothy yeast mixture and knead into a soft dough.
  3. Coat with oil and allow the dough to rest for 2 hours. Keep the dough bowl covered with damp cloth. The dough will double up.
  4. Mix together all the ingredients of garlic butter.
  5. Dust the countertop with flour and punch the dough for 5 mins.
  6. Spread or roll out the dough into a thick circular disk.
  7. Apply a layer of garlic butter on the dough using a brush.
  8. Then sprinkle the cheese on half the side and cover the cheese with remaining half of dough making a semi-circle or fold into half.
  9. Properly seal the edges.
  10. Brush the remaining butter on the top.
  11. Using a knife give slight cuts on the bread so that once it bakes you get slices formation.
  12. Bake for 15 mins or till slight brown in an oven preheated at 350 F.

Aloo Cheese Paratha/ Tangy  cheesy potato stuffed paratha

I was bored having the regular subji roti and had the craving for aloo paratha prepared by Mumma. However as mumma was not around I had to satisfy my craving all by myself.

So I thought of making them all by myself after taking the recipe from Mumma and giving it my touch..that’s right adding some cheese to it.

Recipe :

Ingredients:

For the stuffing:

  • 2 medium potatoes, boiled & grated
  • 1/3 cup onion, finely chopped
  • 1/2 tsp green chillies, finely chopped
  • 1/2 tsp red chilli powder
  • 1/4 tsp turmeric powder
  • 1/2 tsp garam masala
  • 1/2 tsp chaat masala
  • 1/2 tsp dry mango(aamchur) powder
  • 1/2 tsp ginger garlic paste
  • 1/3 cup shredded cheese
  • salt as per taste

For the dough:

  • 1 cup whole wheat flour
  • salt as per taste
  • 1 tbsp oil
  • water for kneading
  • flour for dusting
  • ghee for roasting

 

Method:

  1. In a mixing bowl, mix together flour, salt and oil. Using water as required need into a soft dough. Coat the dough with a little oil. Cover in a damp towel and allow to rest for atleast 20-30 mins.
  2. Mix all the ingredients of the stuffing. Check the taste and add any ingredient if required. Make into a ball.
  3. Divide the dough into 24 balls and stuffing into 12 balls.
  4. Take two dough balls and roll each into small discs.
  5. Take the stuffing ball and flatten it into a patti.
  6. Place the patti in between the rolled dough discs and seal the edges.
  7. Now roll the stuffed disc into a bigger disc to form a paratha.
  8. Cook the paratha on a hot tava or griddle on both the sides by applying ghee (butter) and flipping over only once.
  9. Serve hot as is or with tomato sauce for breakfast or snacks.

Chilli Cheese Toast

As my husband comes all hungry in the evening from office, I am expected to be ready with some yummy snack item in the evening. Most of the time this does not turn to be so even if I put thinking cap on still no idea pops up and I end up giving him some ready-made chips, muffins, etc along with protein milk.

But some lucky days are such that an idea just strikes like a wave and you end up making a delicious yummy snack even without having thought much or not thought at all. Yesterday evening was one such evening when I was just out of bed after having my evening nap, just washed my face and went into the kitchen. I had some slice bread, very little shredded mozzarella cheese left and some very tiny cherry tomatoes that my aunt had given me  from the crop that was grown in her garden. In 5-10 mins I was ready with the chilli cheese toast.

Recipe :

Ingredients :

  • 4 bread slices
  • 1/2 cup shredded mozzarella cheese (If mozzarella is not readily available, then you can also use grated cheese cube or cheese slices cut into thin strips)
  • 2 tbsp onion, finely chopped
  • 3-4 cherry tomatoes, diced
  • 1 tsp green chilli, finely chopped
  • few sprigs of coriander leaves, finely chopped
  • red chilli flakes, pepper powder, salt, herb blend as per taste
  • capsicum & minced or grated garlic (optional)
  • 1 tsp olive oil
  • 1 tsp milk

Method :

  1. Lightly toast and butter the bread slices.
  2. In a bowl, mix all the ingredients except milk and bread. Check the taste and add accordingly.
  3. If the mixture is not of spreadable consistency, add little milk.
  4. Pre-heat the oven at 350 F.
  5. Spread the mixture evenly on the bread slices.
  6. Place the slices on a baking tray and cook in the pre-heated oven for around 4 mins or till the cheese melts.
  7. Once done and out of the oven, cut the slices into triangles using pizza cutter.
  8. Enjoy as is or with tomato ketchup over a cup of hot tea.

Cheesy Spinach bites

Mondays are usually vegetarian at our place. But just like kids, I don’t like vegetables much. At the same time, I am very petite and want to put on weight. My mum told me that eating cheese can increase weight. So thought I should include cheese in my diet. However, eating too much of cheese is also unhealthy.

So thought lets add something healthy to unhealthy and prepare some snacks. Here is the recipe for cheesy spinach bites

Recipe :

Ingredients :

  • 1/2 cup cream cheese
  • 1/2 cup baby spinach leaves, chopped
  • 1 cup grated mozzarella cheese
  • 1/2 tsp pepper powder
  • salt as per taste
  • 1/2 tsp ginger garlic paste
  • 1-2 tsp red chilli flakes
  • flour for coating
  • cornflour batter for coating (batter needs to be of dropping consistency)
  • breadcrumbs

Method :

  1. Heat water in a vessel. Once it boils, add the spinach into it. It will get cooked and you will achieve blanched spinach. Drain the blanched spinach.
  2. In another vessel, add cream cheese, blanched spinach, mozzarella, pepper powder, ginger garlic paste, chilli flakes and salt as per taste. Mix well and form a thick batter.IMG_20160718_121311-COLLAGE
  3. Take a plate and place a cling wrap on it. Spread the batter in square shape such that it is around 1/2 inch thick (It should like a slab). Wrap the slab in the cling wrap and refrigerate for minimum 30 minutes.
  4. Remove the slab from the cling wrap and cut into bite size squares.
  5. Take each square roll in the flour, then dip in the cornflour batter and coat with breadcrumbs. Roll the bite size square again in the cornflour batter and coat again in bread crumbs. Repeat for all other pieces.
  6. Heat an appe pan (the one I used to make Cheese Bread Oats pops) with 1-2 drops of oil in each hole.
  7. Put one piece in each hole and fry on all sides till brown.
  8. Cheesy Spinach bites are ready. Serve them hot with spicy ketchup.

 

Note : 1) Instead of cornflour batter, you can use beaten egg as well. 2) While frying, there is a tendency that the cheese might ooze out in spite of double coating. But that’s acceptable for me at least 😉

Cheese Bread Oats pops

I had got store-bought shredded mozzarella cheese and it decorated my fridge for quite a while. I wanted to prepare something using it. I just saw some bread buns lying in the kitchen too. The first thing that popped in my mind was Domino’s cheese stuff bread sticks.

But I didn’t want the dish to be deep-fried and I was not quite aware about the exact oven settings to bake them. I was in no mood to experiment with the oven settings.

However, I wanted the rest of the ingredients to be such that it could be prepared even without cheese stuffing as my parents have cholesterol issues. So the recipe goes accordingly.

After eating the cheese bread oats pops, the word that popped out of my family’s mouth was “divine”. This recipe will be one of kids favorite. While parents can add all those veggies unliked by their kids in the dough and the kids will eat them under the yummy divine cheese disguise 🙂

Recipe :

Ingredients :

  • Around 4-5 bread buns ( the buns were slight on the sweeter side so my ingredients depend accordingly)
  • 1 packet of quaker oats
  • 1 grated boiled potato
  • 1/4 capsicum, finely chopped
  • few springs of coriander leaves, finely chopped
  • green chilli paste or red chilli flakes as per taste (I used 1 tsp of green chilli paste and 1/2 tsp red chilli flakes)
  • 1/2 tsp black pepper powder
  • 1/2 tsp mixed dry herbs
  • salt as per taste
  • bread crumbs for coating
  • shredded mozzarella cheese

Note : The above  ingredients form around 15-20 pops

Method :

  1. Take a bowl of water and soak the bread slice in it. Press the slice in between your palms and drain out the water.IMG-20160711-WA0014-COLLAGE

  3. To it, add grated potato, oats, pepper powder, salt, green chilli or red chilli flakes, capsicum, dry mixed herbs, coriander leaves. Mix well and form a dough.
  4. Check the taste and add the seasoning if required.
  5. Apply oil to your palms. Take little portion of the dough and flatten it on your palm.
  6. Put a spoonful of grated cheese in the middle of the flattened dough portion and then cover up the cheese filling with same flattened dough portion to form a ball.IMG-20160711-WA0021
  7. Coat the pops well with breadcrumbs.
  8. Repeat for the rest of the dough. Keep the balls in the freezer for around 10-15min.IMG_20160711_190936
  9. Heat an appe pan with 1-2 drops of oil in each hole. Drop one pop ball in each hole.IMG_20160711_190200

  11. Serve them hot as is or with sauce.

 

Note : For my parents, I prepared without the cheese stuffing and still they tasted yummy. You can also add some more of your favorite and even unliked vegetables.
